Kubel toured Canada in May 1993 with the Athletes in Action USA basketball team as the only undergraduate on the squad. They faced teams from Canada's new National Basketball League and met the Canadian National and Junior National Teams during their 17-day, 9-game tour. Kubel started all nine games and averaged 12.2 points and 6.9 rebounds against older, more experienced players. He led the team in scoring and rebounding twice, with his best outing on May 17 against the NBL's Hamilton Skyhawks when he had 22 points and 9 rebounds. He added 21 points and 7 boards on May 22 against the Canadian Junior National Team. Kubel's first AIA action came in July  1992 on a team to New Zealand that was coached by former Northwestern assistant Randy Anderson.

1992-93: Among the most improved and most productive players in the country, Kubel raised his scoring average by 16.9 points, his rebounding average by 7.2, his FG aim by 8% and his FT aim by 25%. He led the Demons in scoring 15 times, in rebounding 19 times and had 10 double-doubles. His 539-point total was eighth-best single-season output in school history. His 252 rebounds was the most by a Demon in 15 seasons, since Fred Piper snagged 332 in 1977-78. He ranked third in the SLC in scoring (48th nationally), fifth in rebounding and seventh in FG aim.

Kubel had 35 points, a career-high, on 2/8/93 vs. North Texas. He had 17 rebounds twice, one coming along with 27 points in an OT loss at Sam Houston on 1/19/93. He had 22 dunks and hit 87.5% (14-16) FTs and 57.7% (15-26) on his FGs in the final three minutes and OT. In his 29 pint game at Texas-Arlington on 1/4/93, he sank 15 of 19 FTs. The 15 made FTs was tops in the SLC for the season.

1991-92: Played in 19 games, starting three, but averaged only 8.7 minutes per game. In his most productive outing, Kubel scored 13 points, including a 3-point basket, and snagged 9 rebounds in 15 minute stint vs. Jackson State.

1990-91: Topped freshman and ranked third on team with 54.2% shooting aim. He scored in double figures in two of his first five games. opening his career with 16 points (6-8 FGs) and 5 rebounds (130 Dec. 10 vs. Ouachita Baptist. But Kubel got double figures only once more, scoring 10 on Jan. 14 in the near-upset of NCAA-bound Northeast La.

At Moreno Valley HS: Helped team post a 21-7 record, win a share of the league championship and reach the third round of the California state 5A tournament. Moreno Valley was 87-34 in Kubel's four-year career and reached the third round of the playoffs each year. He was all-league and all-county as a senior, averaging 19 points and 12 rebounds. Kubel was all-league as a junior, averaging 16 points and 9 rebounds. He was one of the leading scorers on he Orange County team which played for the championship of the Basketball Congress International age group tournament during the summer, when the Demon coaches first saw him play.

Personal: Eric Brian Kubel is the son of William and Dorleen Kubel. His father is a flight test engineer. Kubel is a business administration major and an honor student. His life's ambition is "to make an impact for Jesus Christ."
